I own a Roland, but the PA not the CBA. Now, in theory, I will say that they can likely be set up to sound like a Cajun accordion (there is even a set called CAJUN, but I am not intimately familiar with how a true Cajun accordion sounds in real life), however, I doubt they can be reconfigured to physically work like a 1 or 2-row diatonic. I've gone through the manual on my 8X about 5-6 times now and learn new things everyday, but I have not bumped in to this configuration.
I assume that in order to be bisonoric the bellows sensors would have to sense direction (unless there was some other sensor to do that).

Just a small aside -- as little as a year after the FR-18 came out, eBay was full of them! I guess the people who bought them didnt like them, either.
If Im not mistaken, the FR-8x and 8xb do come with bellows sensors that sense bellows direction. I think I read that somewhere. Would somebody please either back me up or tell me Im mistaken? If Im correct, TomBR and mitchnc deserve the credit for that idea. Unfortunately, Im not with Roland, so I cant pay anything
Yes the sensor does detect pressures going in both directions, else it would not be able to modulate volume based on pressure amounts in both directions, but can that be used to change tones by changing directions of the bellows? Right now the 8X doesn't do that and it is even remotely possible that its not even in the programming.
Jerry is right. Senses both directions. I don't imagine that Roland will bring out an update with bi-sonoric settings. They haven't even provided an editor for the 8x.
I remember Roland stated that 8x provides slightly different tones based on bellows direction, and it irritated some players so they asked how to switch it off
