Nope, not the famous Ward Allen tune here played on accordion. (On my "someday" list.)

This year, when tapping my maple trees, I decided to make some Italian maple syrup! 🤣🇮🇹🍁🍁

Yup, that's the one! Actually, Dingo, (sorry, I don't know if there is maple "down under.") the sap is pretty good drinking straight out of the tree. I plan to play while I boil this year because my sister is visiting. She has a commercial setup, but the last few years have been a disaster due to global warming. Like off 60% or more. Bad news.

My sympathies regarding the poor harvest.
No, we have no maples or anything similar here in Australia, although there's plenty of sugar cane grown (and rum distilled) in Queensland 😄
But, I do remember the tapping of birches in Europe, when I was there as a boy 🙂.
BTW, just curious, does anyone ever ferment the maple juice?🤔
Ahh, yes, I see it can be done and there are various articles about it on the web, like the one here:😄

Thanks Dingo! I haven't heard of anyone distilling (or fermenting) the sap or syrup, but I did use my own syrup last year to sweeten my lemoncello.

The weather has been so odd lately, that I wonder if spring is ever going to decide to arrive! We're getting temp swings of -17C to +12 and back and forth... rain one day followed by snow... strangest spring I can ever recall. Near 30 degrees of up and down cannot be good and has already pretty much killed off the flowers that started to bloom in my mom's little garden at the front of the house.

This cannot be good for the maple syrup industry here too... that means that prices (that are already crazy) will likely go higher. It's far more expensive than premium fuel already!

Yup, here too. It's bad. All the ash and beech around here have died. Good for firewood but bad for canopy. I've gone from a maple/beech forest to a maple savannah. And they say it's only a matter of time for the maple 😪😪😪🍁🍁🍁. I'm planting coniferous as fast as I can, pine, hemlock, spruce.

Real problem for me is the cost of fuel. I could probably do 50 taps easy but I'm not about to burn wood by the cord or convert to propane. Many people are going to reverse osmosis to help. Or honey. But then you gotta keep your bees alive. Might as well busk I guess.
 
Tom: Your experiences are disturbing and bring the eco situation into sharper focus. Those in power seem oblivious to how our finely balanced climate systems work. The accordion's always been an escape of sorts but it seems it's getting more important.

You're right about that, unfortunately.

Might have to add Big Yellow Taxi to the old busking list.
 
Italian maple syrup, Botswanian maple syrup, even Texan maple syrup; it's all good if it's maple syrup!
 
Yeah, that's right. I planted about 15 red and white pine, spruce and hemlock yesterday. Here you can see that the beech have all died, only the maple are left. Monoculture savannah forest is dangerous. I only cooked a token batch of syrup this year, but it's amazing as usual!

"I havs a bone to pick with you," as my mother used to say whenever she caught me in an infraction I had though that I had gotten away with.

I read your thread here with interest and returned to it late last night. Went to bed afterward with maple syrup on my mind, figuring on saturating a simple piece of buttered toast in maple syrup at breakfast.

So, this morning, without any prompting by me, Mrs. noelekal announced that she was making a new recipe of waffles made from amaranth flour. You see, she has developed a gluten intolerance to wheat flour.

I don't have an intolerance, but simply enjoy all the baked goodies she tries out on me. I slathered those suckers in enough maple syrup to cause a diabetic coma and gobbled them right up.

Did I mention that this is your fault?
