No, we have no maples or anything similar here in Australia, although there's plenty of sugar cane grown (and rum distilled) in Queensland
But, I do remember the tapping of birches in Europe, when I was there as a boy.
BTW, just curious, does anyone ever ferment the maple juice?

Yup, here too. It's bad. All the ash and beech around here have died. Good for firewood but bad for canopy. I've gone from a maple/beech forest to a maple savannah. And they say it's only a matter of time for the mapleThe weather has been so odd lately, that I wonder if spring is ever going to decide to arrive! We're getting temp swings of -17C to +12 and back and forth... rain one day followed by snow... strangest spring I can ever recall. Near 30 degrees of up and down cannot be good and has already pretty much killed off the flowers that started to bloom in my mom's little garden at the front of the house.
This cannot be good for the maple syrup industry here too... that means that prices (that are already crazy) will likely go higher. It's far more expensive than premium fuel already!
You're right about that, unfortunately.Tom: Your experiences are disturbing and bring the eco situation into sharper focus. Those in power seem oblivious to how our finely balanced climate systems work. The accordion's always been an escape of sorts but it seems it's getting more important.
