Brilliant young players and hats off to them, but young players with big accordions do worry me from a physical point of view. I remember a lad of about 10-12 playing really well in a festival session, then standing up and easing his back after playing. That seems bad.

Too big accordions is indeed worrying if played by very young children. Accordion teachers should always be careful the accordions are lightweight, especially with very young children.
In Russia the youngest can start with a 2 kg mini bayan (eg 22 buttons or 25 buttons, with only 12 major chord basses).
It's possible these young players in the videos started their accordion education at a very early age on these mini accordions/bayans.
But the pieces they play in these videos are conservatory and concert level, you need bellows large enough for the lung power or air power these pieces require. These pieces are almost impossible to play on a mini accordion or mini bayan.
In the videos these 10-13 year old kids don't seem to have major problems with the size of the accordions, they have good bellows control.
But you are right the weight and size of accordions is a point of attention in accordion education of young children.

Pigini only recently made a similar model "the Simba", weighing 3,5 kg, for very young children. In Western countries, they didn't have these smallweight 2-3 kg accordions until very recently. In Russia these mini bayans (like "malysh bayans") have existed for decades, facilitating the accordion/bayan education for very young children.
So kids in western parts of Europe had to start with accordions starting from 5,5 kg up to 10 kg or more...
Finally, Castelfidardo makers realise mini models for the youngest starterts are missing in their offer/catalogues.

What is the musette piece played by the 11 year old. I really like it and he's freeking good too

The musette piece is composed by a certain A. Dorenski and is simply called Musette or Valse Musette.
I think it may be composed by a Russian in French musette style.

This on the other hand is a French musette piece by Alain Musichini, played by the same kid:

А. Музикини (A. Musichini): До упора

Valse Arabesque (André Astier):

А. Астье Вальс-арабеск

The 11 year old kid in the A. Dorenski Musette video , it reads Vladimir Parsanov (Владимир Парсанов )
А. Доренский Мюзет- Владимир Парсанов 11 лет г. Волгодонск

Here is a video showing a fragment from an accordion lesson in music school, showing the simple and small accordions used in Russia for young accordion starters:

note the difference in size between the teachers bayan and the young boys bayan.
The kid is playing a poor quality but lightweight little bayan. He is named Parsanov (?), dont know if this is the same Vladimir Parsanov, but he looks like him.

and here is a unique view on the smallest type of bayans/accordions, used in accordion education for children:
(start the video at minute 2300)

these little bayans can be as lightweight as 2,1 kg to maximum 3 kg to 3,5 kg, depending on the number of voices and number of basses.
This one may be around 2,1 kg.
At 2640 you can see this tiny bayan standing in front of a computer screen, this gives a good comparison of the small size of this instrument.
Unfortunately the quality of these mini bayans is rather poor, and they sound a bit harsh.
But this is the kind of bayans/accordions the youngest children start their accordion/bayan education with.

The advantage is these children can start bayan/accordion education at a very young age.
